Victor’s Eggs Mature




In Supper with the Stars, Victor's cheese-fuelled scrambled eggs are paired with Vincent's kedgeree of salmon and both are perfect after a late night out, for brunch or while watching the 1947 mystery Moss Rose starring the Hollywood icons.

How to make

Melt the butter in a skillet.

Discard the pepper seeds, then chop the peppers finely.

Fry the chopped peppers in the butter.

When the peppers begin to crisp, add the cheese, and lower the heat.

When the cheese has completely melted and has begun to brown on the edges of the pan, stir in the eggs.

When the eggs are cooked, the dish is ready to serve.


4 tablespoons butter

3 wax chilli peppers

1/2 lb American cheese, grated

6 eggs, beaten
